Tomato Sauce

The local tomatoes are still coming! Take advantage with this quick and easy tomato sauce, it comes together in only 30 minutes.

Throw a pound of coarsely chunked tomatoes, two garlic cloves, a large squirt of anchovy paste, and 1/4 teaspoon each of kosher salt and black pepper into a food processor.

With the machine running, drizzle in 1/4 cup of olive oil until smooth. Transfer to a small pot, add 1 tablespoon of tomato paste and simmer uncovered for 15 minutes. As always, salt and pepper to taste.

To take it to another level, add a handful of chopped basil, arugula, or a few pinches of red chili flakes.
